I ordered m100 fibre broadband on the 18th December, it's now the 26th and I still haven't had any follow up emails. The order summary I received was from webteam@virginmedia.com, I'm wondering if it was a scam?

Your situation sounds along the same lines as this thread https://community.virginmedia.com/t5/QuickStart-set-up-and/M100-Fibre-Broadband from a couple of months ago.
The email address would seem to be genuine, although email addresses can always be spoofed (faked) of course.
However, like the poster in that thread you will need to wait until one of the Forum Team (VM employees who support this forum) picks up your post. They will contact you via the forum and hopefully they will be able to check the status of your order.
There is a reduced number of staff on duty at the moment so that may well take some time.
