Have just “upgraded” to 360 and have noticed that after recording an episode of a series, when I go back to watch it my recordings also show every available episode from on demand.
Does anyone know if there is a way to only show what I’ve actually recorded?

This could be due to the way you've set up your series link to record as there are many options. If you check your series link for the programme, you can set any of the following up:
You should be able to amend the options to select recordings only. If you're unsure on where to find this, follow the steps below:

Unfortunately Kath_F's information is for the V6 and not the 360.
When setting a series link select the Advanced settings and then select New Only, you usually have the following options;
This episode only, From this episode onwards, All from series xx only, All from series xx and onwards, New episodes only and All available episodes.
If the problem is with for example an ITV recording it might be listing what's also available as catch-up on ITVX if you are looking at the episodes link.
