I have a 360 box downstairs with my hub 5 and it’s got a splitter, would an extension cable be able to run out one end of the splitter up to my bedroom and then connect the hub to that end so my room can be wired up properly and the tv box remain downstairs ?

£25 non fault call-out fee for this work. Tech will install all necessary cables etc. and rebalance power levels etc. This should not be done yourself. A VM Mod should reply within a couple of days.

You are happy to have coax run from downstairs up to the bedroom, why not run a Ethernet cable ???
A single segment of Ethernet cable can be up to 100 meters.

VM dont fit ethernet cable runs. Its a (very simple!) DIY job - or - any network installer will do it for you.
