The Hub 5 with 1g package barely gets 200mb in multiple rooms in the house. Granted it is through a wireless connection but an Ethernet is not really an option. Not even getting 25% of the package capabilities is pretty poor in all honesty.
What can I do to boost the signal throughout the house?

The 1gb speeds are only to the router, after that there are many different factors that will affect your speeds.
I would suggest 200mbs in the bedroom which is I'm guessing another room to where the router is actually pretty good.

Folks buy far too much internet and then have no clue as to how to use it !
What real work task or TV streaming you can't do on a mobile or laptop at 200Mb/s ?

Virginmedia make a lot of money from people who are attracted to big numbers and never use them.

I will also mention VM only guarantee 30Mb over Wifi ....... If you need more, buy your own Wifi solution and don't look back. A decent kit will work with any ISP so will remain to be useful in the future.

I have a separate router with 2 satellites, would I be better off setting that up with the hub 5 in modem mode?

Yes. Hubs in modem mode are always better.

What is the make and model of your router? The Hub 5 is a Wifi 6 model, so that may have a bearing on the solution. But, as @Tudor has stated modem mode is preferable as it allows you control over the network.

Your connection is designed to be shared across several devices at the same time.
Each device doesn't 'see' '1g'.
