Whilst I can see how to archive or export  individual files how do I archive/export all the files and folders of an email account?

Webmail does not provide such a feature. Instead consider:

• use Thunderbird, or a similar email client, to download all messages from account and then set it offline to preserve
• using MailStore Home - Free Email Archiving & Backup for Home Users or similar package to backup IMAP account
