New install, will I be able to configure modem only?

I'm about to get my gig1 installed in a couple of days.  The external work has been completed ready.

My concern is that I will require modem only option and I've read the new hub 5x cannot be configured this way.  Can I request a hub5 instead?

Our property is quite large, and currently we use eight wifi access points to distribute a decent signal around the house. I appreciatevwe could just use the 5x and have double Nat with our existing network but this causes issues with multiple devices in the house (not least of which kids gaming consoles).

Is there a method of using the 5x in modem only, or can I request the hub 5 to ensure I can use the connection as I need?

    Can anyone here that is double NAT help me out? I don’t have the option to put my UniFi Dream Machine in a DMZ as the option is not there on my HUB 5x I have done everything else bar the DMZ and my UDM is seeing the connection and can run a speed test from the dashboard without issues. The problem is I think a DNS issue, webpages wont resolve but I have everything set at what I think should work. The below is my version
