How do i copy my e mail folders on to my hard disk ?

If you mean purely for archiving purposes (such as if you are leaving VM and losing access to your VM email account) try

I am using apple " mail ' as my provider.
On my apple mac.
When I export folder to my desktop- all I get is " code" - pls see attached

That's precisely how the export works. When a folder is exported it uses two files. An MBOX file which contains all the exported mails in one file, and a table of contents which contains a list of the emails and their ID's
When you import the folder back to a mail program that supports the MBOX format the mail structure is restored.

Just to clarify this - The code that @green644 mentions is literally how emails are stored and sent. If you select View->Message->Raw Source on any mail you will see the code for the individual mail. Your email program reads the code and renders it appropriately..
The MBOX file you get in the export is just the code for all mails provided in a single file with identifiers separating each mail, The separate table of contents files is just a list of mail identifiers.
