I have to say that  New Outlook does not get good reviews but as I don't use Outlook these days I cannot really comment.

I must say Outlook Classic is better than the new Outlook!

That's what everyone says LOL. 

You don't have to use Outlook unless you want to, there are other options. Personally I switched from Outlook to Thunderbird, a free open source email email client a few years ago.

Another vote here for Thunderbird, which I've used happily for many years.

Remember that when your emails are diverted through Outlook you are letting Microsoft know all your contacts, which they add to their data gathering on you and them.
