How long does one wait for retentions to call?

I've given my 30 days notice on the 20th of June, starting to sweat a bit. Marketing preferences etc have been enabled on my account for over a year. Worth mentioning I'm currently on one of those "mates rates" deals where I used a VM employee's link to purchase gigabit for £36/month. I've got no better options around me and definitely need gigabit so can't really shop around.

It sounds to me like it's not going to happen. Either call in and settle on the best deal you can get or else make a serious start on securing an alternative.

You need to think of it as a game of poker, bluff and counter-bluff.

From your perspective, you want a ‘better deal’, from VM’s perspective they want to tie you in to a contract for the maximum amount of of money they can - fine, it’s called business!

Now, your problem is that they have called your bluff. When you cancelled, VM will be fully aware of what alternative,  similar providers are available to you. Like you they have concluded, none, and hence there is almost certainly a flag on your account along the lines of, ‘if this person calls, offer them nothing, they have no alternative, they’ll come crawling back and suck up whatever we demand’ or something along those lines - and alas you have just confirmed that ,“I've got no better options around me and definitely need gigabit so can't really shop around.”.

Sorry, but VM are now going to suck you dry.
