Seriously? Theyre happy to tack on extra things to make the price around the same but when it comes to removing they cant. Why can't I go from Broadband and tv (with several addons) to just Broadband? How do I tell these people that I still want to stay with them but only keep broadband, without some sort of notice that I want to cancel?

If VM is not offering what you want, at a price you want to pay, then put in your notice to cancel.

VM operate on a bundling basis - the more services you take, the greater the "basket" discounts offered. Conversely, the fewer services you take, the less discount is offered and the higher "per unit" price.
You're quite welcome to take broadband-solo, but as mentioned already - if you're not happy with whatever price VM offer you, then you should already have priced up alternative suppliers and be willing to have them installed inplace. If your finances allow, make sure you have a period of overlap between a new provider being installed and VM being cancelled - to ensure you're happy with the new supplier.
