We currently have a broadband/home phone/tv package, but we never watch the tv so we were thinking of getting rid of the tv package part.
We have Gig1 Fibre broadband/Mixit tv and then the homephone. Does anyone know roughly how much a package reduces by once you get rid of the tv? and do any parts need to be sent back? also, is freeview available? i read its built into some tvs, but you also need a satellite dish.
Ive been looking on their packages on their website (and trying to contact VM) but there's a ton of them and some include O2 sims and things which we don't want/need.

A few points to make here.
1: VM operate a multi-bundle discounting system - the more services you take, the lower the per-unit price. With telephony especially, the discounts are sufficiently generous that the "with" price is often cheaper than the "without" - and thus removing services actually increases the price.
If that extends to a bundle with unwanted extras costing less, then ask yourself whether those extras are going to inconvenience you. If not, are they worth having just to get the extra discount?
2: VM is a cable-delivered pay-TV platform, Sky is a satellite-delivered pay-TV platform, Freeview & Freesat are FTA terrestrial & satellite-platforms respectively. Thus yes, most modern TV's have in-built Freeview, but check the manual to be sure.
2: You will only need a satellite dish if you want to receive satellite transmissions, be it Freesat or Sky pay.

If you don't want Pay TV then check out other ISPs for their broadband and phone packages which will probably be cheaper than VM's.
You can get Freeview or Freesat which will require an aerial or satellite dish respectively. Furthermore most modern smart TVs sold in the UK will likely have Freeview Play built-in* for delivery of catch-up and on demand over broadband.
* If your TV doesn't support Freeview Play you can get a Freeview Play set-top box.
