ITVX - WATCH FROM START .. not available for Live TV
Why the V6 version of ITVX doesn’t support watch from start? Samsung TV and Firestick ITVX does support - so guess on old version of the app…

I've never tried to use the facility, but if you know you'll want to watch a particular programme - why not set it to record? If you happen to have a recording tuner idling on ITV, then you could rewind on that.
If you're desperate for the startover function, it's probably available on the TV360. But do think long & hard about the relative pros & cons.
My V6 ITVX app does not have an option to view the live channels. I thought the facility was only available on the Horizon app anyway.
