I record alot of stuff on itv3 and never had any problems until today. Emerdale or corrie didnt record due to the channel was removed from yourline up not sure what that means?

As per the notice on the splash screen about the changes, you need to re-set your series links.

There should have been a display on your TV that advised certain changes to channels from today which may require changes to series links.
Assuming the channel you are referring to is the SD version of ITV3, I believe this has been replaced by the HD version, meaning you will have to change your series links.

There has been warnings since Sunday when the box is first turned on about channel changes and you may need to reset your series links.

Yes, just delete the series link and then go to 117 and find the programmes and set new series links.

ie When a series finishes, the link disappears until a possible next series starts. So it can't be updated. It could be a year later before reappearing and I'd have to try and remember to update it.

Are you saying that the Series Links that you have set up aren't appearing, and therefore you can't cancel/stop them? If so, can you try performing a reboot of the box and letting us know if the issue continues?
