It sounds like you've set the 360 box up to automatically show subtitles when available.
Settings (the cog wheel) > Accessibility > Subtitle options > click OK to change to ON > then press the back button (directly above the volume up/down button) to save your choice.
Using the speech button and built in microphone it should work if you say "subtitles on" and "subtitles off" - you might need new batteries if it isn't recognising your voice command.
It may also sometime say, ".Don’t know how to do that", or "That’s not possible." if there aren't any subtitles available for that particular program.
When you use the three dots (context button) if it's showing a tick next to Off then press down on the 360 navigational pad so the cursor goes onto English and press then OK - that turns the subtitles on.
