Webcam Issues

I have a 500mbps broadband speed, which, according to speed checkers is where it is running at, and yet, whenever i try to use an app or my phone on wifi for webcam chats, be it on Skype or Viber, the connection is terrible and drops out or freezes consistently.  Anyone any ideas why that may be?

When we use Skype in HD video we see about 2.7 Mb/s up & down throughout the call.
