I want to add a new hard line into the home office.

Now we are all working from home, including kids on tablets, wife on Netflix - I was thinking it would be more beneficial to install a new hard wire Ethernet port in the upstairs office. Is this something that only VM would be able to do?

anyone can do ethernet. VM will not install ethernet for you

Some aerial installers & electricians will do this type of wiring, but it is really cheaper to DIY.

The back of my router is already full - can something be done rather than just another line from a splitter or is this the only way?

Search for Ethernet switch on your favourite search engine.  That is what you need to expand the number of available ports.

Personally I ran a flat ethernet cable upstairs under the carpet.
