HDMI cables do not have version numbers. For the vast majority of people High Speed (maximum transfer rate is 10.2Gbps) is fine as it supports UHD Blu-ray and 4K video at 24fps. If you need better than this such as 4K at 60fps then Premium High Speed (18Gbps) will handle almost everything at 4K.
For uncompressed 8K video and gamers who need 4K at 120fps you need Ultra High Speed (48Gbps) - which means very few right now.
