Is there any way to defer my start date with Virgin Media in order to avoid overlapping with my current broadband provider?

I have, yes.
I would advise you to keep your current broadband active until the VM broadband is installed and up and running, just in case there are any snags or delays.

Thank you for following this up - though I've decided to retain the earlier installation date, as my internet with the current provider has (coincidentally only after having cancelled my contract with them) started acting up.
