Backing up email

I live in hope that I will eventually get my historic emails back; does anyone here have any advice as to how I can then back these up to a hard drive?

Thanks - I should have added that I'm using a Mac. Not sure if MailStore will work with that.

I forward important stuff to my Gmail account.

Use an email client on macOS and either include its content in your backup routine or manually export mailbox to location that is.
