I am at a loss as to how to replace a device, what on earth do I put in this box?
then I get this message

The box is where you put the name of the device which is replacing the one you have chosen to have replaced.
It’s the device you are currently running the app on, I would think.

Why can't you just delete the unnecessary and unused devices?

For Sky Sports devices you can go here using a private browsing session to remove old devices
