For anyone following this thread, I think I have found a workaround. (FOR A HUB 3)
In advanced settings I set the channel setting to auto instead of manual,
re-enabled channel optimisation and kept applying the changes until it selected a suitable quiet channel,
dis-abled channel optimisation again.
It now has been stable on my preferred channel (40) for hours now.
