Any Ethernet cable that is marked Cat 5e or Cat 6 is more than enough going any higher Cat will not make any difference.

If you're doing a long run of cable with the potential for interference (eg from parallel mains electricity, or passing near fluorescent lights, motors or similar) you would be better of using shielded ethernet, that's Cat 6a or Cat 7. For the lengths being used in a residential property the extra cost is negligible.

Totally unnecessary to use Cat7 cable. Some of my house is still wired with good quality AT&T Cat5 cable and it easily achieves 1G even on long runs with no interference. Just make sure you buy good quality cables.

No Cat5, my house has been fully flood wired for years with diversely routed multi cables. The AT&T cable physically looks much better than some Cat6 I’ve seen and also has very tight turns within the pairs. Originally I only had 100M equipment and used the blue pair for telephones with RJ45 to UK telephone adapters. Now got various 1G switches about the place and use LAGs between them.
