Hi, I recently decided to get an iPhone 5s on contract with Virgin and I've gone through the whole order process and my new phone will be here Monday.
I currently have a cheap sim only contract with Virgin as I always just bought my own handsets, usually second hand.
Will I be able to cancel my sim only contract easily? And will I be able to keep my number?

if during the order process you had of said that you were a SIM only customer upgrading that would have taken care of things.
