As mentioned, notice of cancellation must be given by speaking to one of the Team (789 / 0345 6000 789).
Or in writing.

if you do not wish to give notice of cancellation by calling the Virgin Team on 789 (free) from your mobile or 0345 6000 789 from any other phone.
Then you can do so in writing, addressed to:
Virgin MediaPO Box 333Matrix CourtSwanseaSA7 9ZJ
Please ensure that along with your intent to cancel you give your full name and address, VM phone number and prefered contact details.
I'm sorry to hear you're going to be cancelling one of your handsets with us.

If you have any documentation stating you only wished to have one contract, we'd be more than happy to help you.
You can record calls on your smartphone, if that's what you're using. There are numerous apps that do it, and it's far harder to forge a recording than an email.
