Hi martindoggy,
If you log into Webmail are your emails still there or are they deleted from the server? If so you may need to change settings in Forwarding POP/IMAP. Have a look and see what When messages are accessed with POP has next to it, you may need to change it to the option that keeps a copy in the inbox. I hope this helps.

I have the same problem, and having just got a new mobile specifically for collecting emails about a new contracting job, I find it rather frustrating.
The "When messages are accessed with POP" is set to "Keep Virgin Media's mail in the inbox", but it still deletes it from the mobile.
Are there any other settings anyone knows of which will prevent my mobile being rendered useless as far as POP3 mail is concerned?
[Edit to say the mobile is a Samsung Nexus S with Vodafone.]
Many thanks,
Uncle Phil.

I too am experiencing a similar issue with my emails on my Nokia C5 mobile being deleted.
I have the mailbox set up as Blueyonder being that my address doesn't end in VirginMeda, and have set it up with pop3 incoming and smtp for outgoing, and yet someone just sent me an email, and I opened it on my mobile via that mailbox, when I closed the box by disconnecting and then connecting again the 2 emails that had just come in then just deleted by themselves! I have never opened them on webmail or email client on computer, so what is going on.
I am aware I can view my emails by logging in to virginmedia.com, but I prefer the phone application for this, but this is frustrating.
When I do look at webmail these emails are still showing, unless I delete them via my microsoft outlook client then delete from the deleted folder, because I have it set up as recent it then checked to delete from the server, but the emails should delete on their own from the mobile unless I delete them myself, or as I say via my computer, so what is going on, please help.
I have IMAP set as enabled via VM email settings.
EDIT,
Oh and before you ask, yes I have it currently set as When messages are accessed with POP for it to keep the mail in the mailbox.

once an email client has downloaded an email via POP then that email client has its own local copy of said email. I am not aware of any function within the email servers which could then reach into the client and delete its local copy. For example, even if I delete emails witiin webmail it has no impact on the copy already downloaded to my PC. So I suspect that whtever is going on with your mobile phone is a function of the mobile itself, and nothing to do with VM - unless you are actually using IMAP instead of POP3
Likewise "Oh and before you ask, yes I have it currently set as When messages are accessed with POP for it to keep the mail in the mailbox." is of no relevance - deleting emails on the server has no effect on the copy downloaded to a client via POP.
Maybe you could try switching off data immediately after receiving (and before opening) some emails (or even removing the SIM card, if the phone is able to function without it) to rule out any action from beyond, and then see if your received emails continue to vanish. If they do you can be sure it is the phone acting on its own.

I have IMAP enabled but on the phone it's set up with pop3 and smtp, so unsure if it's using IMAP or not.
There doesn't seem to be a way of retrieving these emails via the phone once they vanish.
Is there any specific settings that could be doing this?

maybe try disabling IMAP on the phone?
Or go into webmail/settings and edit which folders you want to be visible in IMAP
